• Beef Taco’s

    Ingredients!

    1/2 lb  ground beef
    2 tablespoons flour
    3/4 teaspoon salt
    1/4 teaspoon dried onion flakes
    1/4 teaspoon paprika
    1 1/2 teaspoons chili powder
    1 dash garlic powder
    1 dash onion powder
    1/4 cup water
    5 small tortillas
    1 medium red onion diced
    lettuce
    shredded cheese
    sour cream
    tomato, diced

    Directions:
    1 In a medium bowl combine the beef with the flour, salt, minced onion, paprika, chili powder, garlic powder and onion powder Use your hands to mix evenly.

    2 Heat skillet to med/low heat.

    3 Add beef mixture and water to the pan.

    4 Brown the beef, breaking it up as it cooks.

    5 Heat the tortillas in the microwave, wrapped in damp paper towels.

    6 Spread meat into tortillas, top with cheese, tomatoes, red onions, lettuce and sour cream.

  • Empanada’s made from leftover meatloaf! really?

    We had some left over meat loaf. Not enough to do anything with but warm it up and serve it for sandwiches. Why not crumble up your left over meatloaf and add Mexican 4 cheeses, then add some finally chopped Jalapeno’s! Mix well and fill your Empanadas. I use pie shells and shape and cut them with my Empanada press. Pizza dough is even better for Empanadas. If you’re using fruit as a filler, always use pie shells!

    Here’s some photos of what they looked like before we devoured them! Pictured is a small and medium sized Empanada cutter/press. Here you can see the front and back of the Empanada presses. Use the back to cut the shape, then load the other side with the cut shapes and your mix, deep fry or bake and enjoy!

  • Pig roast for Memorial Day weekend!

    A pig roast in a La Caja China was great for Memorial Day weekend! Even the skin turned out crispy. The pork was tender and juicy and we fed more than 120 with this 60 lb. pig along with 6 whole chickens and tons of food. Hope your Memorial Day weekend turns out as good as ours. We used only salt and Dizzy Pig for spices!
